Pumpkin Cookies with White Chocolate Chips

I thought the Pumpkin Spice Donut Muffins for among the best things I've ever made, but when I brought these Pumpkin Cookies with White Chocolate Chips into work a few days later, my boss declared, "these are the best things I've ever eaten... the best!"

So, if you are a pumpkin fan, cookie fan, or just someone who enjoys life, give these cookies a go. They may or may not have been my breakfast for two days in a row... OK, they absolutely were my breakfast for two days in a row.


Pumpkin Cookies with White Chocolate Chips (adapted from Tasty Kitchen)
Makes 2-3 dozen small cookies
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 2 teaspoons Pumpkin Pie Spice
  • 1/2 teaspoons salt
  • 1/2 cups butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cups brown sugar
  • 1 cup pumpkin puree
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups white chocolate chips

Directions:
  • Preheat oven to 350 degrees
  • In a large bowl, cream butter and sugars until light and fluffy
  • Add pumpkin, egg, and vanilla and mix until combined
  • In another bowl, whisk flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt in a medium bowl
  • Add dry ingredients slowly to large bowl and mix until just incorporated
  • Stir in white chocolate chips
  • Drop small spoonfuls of dough onto a cookie sheet lined with parchment paper
  • Bake for 11-13 minutes, or until edges are just starting to harden
  • Cool on the cookie sheet for just a few minutes before moving to a cooling rack to cool completely
