So, if you are a pumpkin fan, cookie fan, or just someone who enjoys life, give these cookies a go. They may or may not have been my breakfast for two days in a row... OK, they absolutely were my breakfast for two days in a row.
Pumpkin Cookies with White Chocolate Chips (adapted from Tasty Kitchen)
Makes 2-3 dozen small cookies
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 2 teaspoons Pumpkin Pie Spice
- 1/2 teaspoons salt
- 1/2 cups butter, softened
- 3/4 cup granulated sugar
- 3/4 cups brown sugar
- 1 cup pumpkin puree
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 cups white chocolate chips
Directions:
- Preheat oven to 350 degrees
- In a large bowl, cream butter and sugars until light and fluffy
- Add pumpkin, egg, and vanilla and mix until combined
- In another bowl, whisk flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt in a medium bowl
- Add dry ingredients slowly to large bowl and mix until just incorporated
- Stir in white chocolate chips
- Drop small spoonfuls of dough onto a cookie sheet lined with parchment paper
- Bake for 11-13 minutes, or until edges are just starting to harden
- Cool on the cookie sheet for just a few minutes before moving to a cooling rack to cool completely
