Maize and Blue Parfaits

The Champions of the West — GO BLUE!


These simple Maize and Blue Parfaits were made with lemon curd, cool whip, and blueberries. Just a spoonful or two of each in three (or four) neat layers. Lovely!

Lemon Curd: (Recipe altered from the one I used in my Lemon Almond Cupcakes originally created by combining a recipe from joyofbaking.com with directions from finecooking.com 
  • 2 eggs
  • 1/2 cup sugar
  • zest and juice from 1 large lemon
  • 2 tablespoons butter, softened
Directions:
  • Mix zest in with sugar, and cream the butter and sugar until fluffy
  • Add eggs one at a time
  • Add the lemon juice.
  • Once everything is mixed together, pour it into a pot and stir constantly over a low flame for 15 minutes (take a break at your own risk — the mixture will bubble, sputter, and BURN!)
